Chia seeds: Gluten Free.

Celiac disease is characterized for the gluten intolerance. Chia seeds are recommended for people that suffer this dIsease, because they are gluten free, unlike cereal grains (barley, oats, wheat and rye).

Chia seed possesses a higher percentage of protein even higher than some traditional cereals such as wheat, corn, rice, oats, and barley.

The Argentina Celiac Association has tested chia and found it to be free of gluten; thus, it has been endorsed for use by celiac patients. A symbol on the label of chia, sold in Argentina, advises that it is a gluten- free food according to the Argentine- food coding system. (Ayerza and Coates- 2005)
